10/10 recommend this recipe to have your whole house smell amazing. Plus who doesn’t love chicken noodle soup?
Honestly, I felt pretty superior being able to make my own stock and soup from scratch. It really didn’t take that many ingredients, but it is an all day activity, which in my opinion is the perfect recipe for quarantine life.
INGREDIENTS:
- For stock:
- Whole onion, unpealed
- Head of parsley
- Head of dill
- 5 celery stalks
- 4 carrots (plus more for final product)
- Half a tablespoon of whole peppercorns
- 2 bay leaves
- Whole chicken
- For soup:
- Full package of egg noodles
- 2 cups of chopped and peeled carrots
- One whole lemon
- Parsley for garnish
- Salt
Alrighty let’s dooooo it:

So take all this (onion, carrots, celery, chicken, peppercorns, bay leaves, parsley, and dill) and throw it in a pot with 16 cups of cold water. Bring to a boil, reduce to a simmer, and set your timer for 1 hour.

After that hour, remove your chicken, and once it’s cool enough, shred off of bones and set aside. Add the bones and carcass back into the broth for added flavor.

Now, set your timer for 3 hours and keep that broth at a simmer. After 3 hours, finely drain the broth into another bowl (DO NOT pour down drain!!!).

Compost everything from the pot and return broth to the pot. Season with lots of salt and return to a boil. Add your egg noodles and peeled and chopped carrots.

Cook till carrots and noodles are tender (6-8 min), then turn off heat and add in chicken and any other ingredients you like (spinach, celery, fresh herbs, etc). I added in the juice of a full lemon and plated, topping with fresh parsley.

I’m sorry but look how pretty she is🥰. It’s corona season, and what is better than chicken noodle soup for when you’re not feeling well. Make it on a lazy Sunday (which is now everyday lol), eat it for dinner, and freeze it for if you feel under the weather❤️
