Being trapped in the house due to COVID-19 has been making me cook up a storm to stay sane (lol), so I’ll be posting several different dishes I’ve been cooking! First up is Shrimp Scampi.

This dish was really simple, with just a few ingredients needed and a pretty short cook time. The majority of the cooking is prepping, from peeling the shrimp and chopping up the seasonings. Keep reading to see my step by step of how I made this dish.
INGREDIENTS:
- 1 pound of linguine
- 2 cloves of garlic
- 2 shallots
- Olive oil (roughly 4 tablespoons)
- 1/2 cup of butter
- 1 pound of shrimp
- Juice of one lemon
- 1/4 cup of chopped parsley (not pictured below but add in at end)
- 1/2 cup of dry white wine
Step 1: Gather and prep ingredients

I prepped the lemon, finely chopped 2 cloves of chopped garlic, grabbed the wine, chopped 2 shallots, and grabbed the 1/2 stick of butter and olive oil. While prepping the ingredients, I also put a large pot of salted water on the stove to get my pasta going. Once I chopped these I moved on to prepping the shrimp.
Step 2: Peel and prep shrimp

This was honestly the most time constraining part of cooking this entire dish… I left the tails on for a prettier presentation. Using scissors, I cut from the bottom of the shrimp to the tail, then removed the peel and deveined. Then I gave them a quick wash to remove any gross juices (eww) or salt water. I found it an easier cleanup to use the bag they came in to put the peels in, and I put the clean shrimp in the strainer. Then I could just seal and throw the entire bag away without a gross smell lingering in the trash.
Step 3: Cook!

I added half of my butter to the pan plus some of the olive oil, then added both the shallots and garlic. I threw in all my shrimp once the shallots turned white, added salt and pepper to both sides, and let them get a nice sear before flipping. Once they turned pink and had a solid sear on each side (roughly 4 min), I removed them from the pan and added in my white wine and lemon juice, plus the remaining butter and oil. Finally, I added in my pasta, which I removed from their pot once they were about 2 minutes from being completely cooked. I combined the sauce and pasta till the pasta was finished (2 min) then added in my parsley. Lastly, I added the shrimp back in, tossed it all together, and plated! Topped it with a bit of Parmesan cheese and a bit more parsley as a garnish and served!

This dish came together super quickly once I finished prepping and I can’t tell you how good it was. This is a perfect quarantine, date night, or quick dish to make, and will satisfy everyone at the table (unless you somehow hate shrimp). It made enough for 3 people plus leftovers.
