This easy recipe made me feel like I was back in Austin eating super fresh Tex-Mex. Not only is the whole thing fresh, bright, and delicious, but ridiculously simple to make with little cook time and prep.
Let’s doooooo it!
INFREDIENTS:
- 1 pound of fresh or frozen shrimp (just make sure they’ve thawed)
- 1/4 head of cabbage
- 2 limes
- 1/2 red onion
- Head of cilantro
- 6 tortillas
- One avocado
- 1 cup of sour cream
- Adobo sauce or seasoning (to taste)
- Large squirt of honey (sorry lol idk how else to describe it)
- Salt

Start by peeling and deveining shrimp and rinse. Add to a bowl with enough honey to coat, adobo sauce, and salt. Set aside while prepping other toppings, but you can marinate for as long as you please.
Finely chop cabbage and toss with lime juice, mix mayo with a bit of water and lime juice to taste, then thinly slice onion and add half a lime, massage till onions break down and are soft. Chop cilantro and avocado and set all of this aside.
Add shrimp to hot pan and sauté till pink (roughly 3 minutes).

Remove from heat and use a new pan to heat tortillas of choice. Take tortilla and add in shrimp, sauce, cabbage, onions, cilantro, and avocado, plus others of choice (cheese, hot sauce, etc.). Then plate, serve, and enjoy!!!

Literally so good, so flavorful, and if I’m gonna be honest, really pretty 🙂 Make for an easy family dinner or (when coronacation is over, a date or friends :)). Let me know if you make it and send pics if you do!!!
